White Chocolate Pistachio Blondies

Recipe makes 16 Servings

1 1/2 cup(s) salted organic butter, softened to room temperature
2 cup(s) organic brown sugar, packed into cup for measuring
1 Tbsp vanilla extract
1/4 Tsp almond extract
3 large organic eggs
1/2 Tsp finely ground sea salt
2 1/2 Tsp baking soda
3 cup(s) organic unbleached flour
10 Oz H-EB Organics White Chocolate Baking Chips
1 cup(s) pistachios, roughly chopped

Preheat oven to 350ºF. Line a 9 x13-inch pan with foil so that edges extend just beyond the top edge of the pan. Set aside.
Using a stand mixer or hand mixer, cream together butter, sugar, vanilla and almond extract until smooth and fluffy.
Add eggs and beat into butter mixture to combine.
Add salt and baking soda, and beat well for about 30 seconds.
Add flour and stir just until incorporated. Using a spoon, stir white chocolate chips and pistachios into dough.
Press into the prepared pan and bake 25 to 30 minutes in the middle of the oven. Blondies should be golden brown on top.
