White Chocolate Ice Cream Sandwiches

Take ice cream out of freezer and allow to thaw slightly on counter for about 5 minutes.
On a baking sheet or cutting board turn cookies upside down so that baked side faces up.
Slice thin sections out of ice cream with a knife and lay onto 1 cookie. Layer about 3/4 an inch of ice cream on cookie and top with another cookie. Gently press together, being careful not to break cookie.
Place cookie sandwiches on sheet pan and refreeze for 30 to 45 minutes, or just until ice cream is firm again. Serve immediately.
Chef's tip: Wrap in plastic wrap if sandwiches are to be used later. This will prevent the cookies from drying out and the ice cream from picking up "off" flavors in the freezer.
