Recipe makes 25 Servings

16 Oz breakfast sausage
1 cup(s) yellow onion, chopped
1 cup(s) celery, chopped
1 cup(s) parsley, chopped
4 1/2 cup(s) whole wheat bread, cubed
1 cup(s) dried cranberries
1 cup(s) walnut halves
14 1/2 Oz natural chicken broth

Heat a large skillet over high heat for 3 minutes.
Add sausage and cook, stirring frequently until crumbly and crusty brown.
Add onion, celery, parsley and continue to cook mixture until onion is clear (about 3 minutes).
Remove mixture from heat.
Combine bread cubes, cranberries, walnut halves, cooked sausage mixture and chicken broth in a large mixing bowl; toss to coat.
Bake stuffing in a separate baking dish, heat the oven to 325°F.
Spray a 13 x 9 inch baking dish with nonstick cooking spray.
Evenly spread stuffing in prepared baking dish and cover with foil.
Bake for 35 minutes, then uncover and bake 5 more minutes
