Ingredients

Recipe makes 4 Servings

1 Lb boneless and skinless chicken breasts
1 Tbsp unsalted butter
1 cup(s) portobello mushrooms, cleaned and quartered
1/3 cup(s) sun-dried tomatoes halves in oil
1/2 cup(s) quarterered artichoke hearts, drained and patted dry
1/2 cup(s) low-sodium chicken broth
1 lemon, juiced

Instructions

Place a large non-stick skillet over medium heat and coat with non-stick cooking spray.

Place chicken in skillet and cook 6 to 8 minutes on each side.

When chicken is cooked, transfer to a clean plate.

Reduce heat to low, add butter and lightly sauté mushrooms, tomatoes and artichokes for 3 minutes until heated through.

Add chicken broth and lemon juice.

Return chicken breasts to skillet and allow sauce to reduce 2 minutes before serving.
