Warm Romaine Salad with Olive Oil and Lemon Juice

Ingredients

Recipe makes 4 Servings

1 romaine lettuce, halved
1 zucchini, thin sliced
1 green onions, root ends removed
1 Love Beets package, cut into quarters
1/4 cup(s) walnuts, lightly toasted
1 Oloves olives package, chili and garlic
2 Tbsp olive oil
1 lemon, juiced

Instructions

Preheat grill to medium heat.

Lightly grill romaine lettuce, zucchini, and green onions until they become tender and have a few char marks.

Place beets, walnuts, and olives on a piece of foil. Fold the foil to form a pouch. Place on the grill for a few moments, just to warm through.

Remove all from grill. Chop lettuce, zucchini, and green onions. Toss with warmed olives, beets, and walnuts.

Drizzle with olive oil and lemon juice. Serve immediately.
