Ingredients

Recipe makes 14 Servings

1 medium shallot, minced
1 Tbsp Dijon mustard
1/4 cup(s) white balsamic vinegar
1 Tbsp honey
1/2 cup(s) La Tourangelle Roasted Walnut Oil, plus 1 tablespoon for peaches
2 fresh peaches, cut in half and pit removed
1 Tbsp fresh mint, chopped

Instructions

Preheat grill to 350ºF or medium heat.

In a blender, combine shallots, mustard, vinegar, and honey. Blend together and while blender is running slowly add in oil until an emulsion forms. Season to taste with salt and pepper as needed. Set aside.

Brush remaining tablespoon of oil onto each peach half and grill 2 to 4 minutes cut side down or until there are grill marks and peaches are warm.

Remove peaches from grill and chop them into smaller bite size pieces. Combine peaches into vinaigrette along with mint, stir to combine and serve immediately.

Chef's note: This is a fantastic dressing to make ahead of time and keep refrigerated. To warm up, add vinaigrette to a non-stick sauté pan and gently whisk over low heat until just warmed.
