Warm Cauliflower & Corn Salad with Basil

Ingredients

Recipe makes 6 Servings

1 large head of cauliflower, chopped small
4 corn on the cob, corn cut off the cob
2 Tbsp extra virgin olive oil
1/2 Tsp kosher salt, plus more as needed to taste
1/2 Tsp cracked black pepper, plus more as needed
1 cup(s) feta cheese
1 bunch of fresh basil, chopped
1/4 cup(s) Four J Grilled Scallion Mustard

Instructions

Preheat oven to 400ºF.

Place cauliflower and corn in a bowl and toss together with olive oil and salt and pepper.

Place seasoned veggie mixture onto a sheet pan and roast 30 to 40 minutes or until veggies have some color. Allow to cool slightly.

Place cauliflower mixture into a serving dish and add feta cheese, basil and mustard.

Toss to combine and season as needed to taste.
