6 Oz vermicelli, dried
1 romaine lettuce, rinsed, dried and sliced into 1 1/2-inch strips
1 cucumber, peeled, seeds removed and chopped
1/2 cup(s) basil leaves
1/2 cup(s) cilantro leaves
1/2 cup(s) mint leaves
12 Oz H-E-B Fully Cooked Beef Fajita Sliced
1/3 cup(s) H-E-B Spicy Peanuts
1/3 cup(s) extra virgin olive oil
3 Tbsp rice vinegar
2 Tbsp Kikkoman Soy Sauce
1/2 Tsp kosher salt

Instructions

Prepare rice vermicelli according to the package directions; drain, set aside.

Add lettuce, cucumber, basil, cilantro and mint leaves to cooked noodles, toss to combine.

Combine olive oil, rice vinegar, soy sauce, and kosher salt in a small bowl and blend together with wire whip.

Heat beef and serve over the tossed salad mixture.

Pour dressing over beef and salad, top with chopped peanuts.
