Veracruz Shrimp Casserole

Recipe makes 10 Servings

2 Lb medium shrimp, peeled and deveined
10 1/2 Oz chicken noodle soup
8 Oz sour cream
1 white onions, chopped
10 Oz diced tomatoes with green chilies
4 Oz green chilies
1 Tsp ground cumin
1/8 Tsp Chef Geoffrey Michael's Caliente Seasoning
12 Oz shredded sharp cheddar cheese
10 yellow corn tortillas, coarsely chopped

Preheat oven to 350°F.
Sauté shrimp in a large skillet.
When shrimp begins to turn pink add rest of ingredients, except cheese and tortillas.
Layer mixture, tortillas and cheese in 3 quart casserole dish. (Reserve a little cheese for the top of casserole.)
Bake for 30 minutes or until top is bubbly and cheese is browned.
