Recipe makes 12 Servings

4 Tbsp olive oil
1 large white onion, thinly sliced
5 cloves garlic, sliced
1/2 medium cauliflower, cut into florets
1 cup(s) shredded carrots
2 cup(s) vegetable broth, divided
3/4 cup(s) whole milk
1/2 Tsp kosher salt
1/4 Tsp white pepper
1 cup(s) shredded cheddar cheese
1/2 cup(s) Parmesan cheese
4 cup(s) cooked macaroni

Preheat a large skillet to medium. Add olive oil, onions and garlic. Cook until onions are well caramelized, stirring frequently.
Meanwhile, bring a large pot of water to boil. Add cauliflower and carrots, and cook until fork tender.
Strain cauliflower and carrots then place in a blender or food processor.
Add half the broth and blend until smooth. Add remaining broth, milk, salt, pepper, ½ the shredded cheddar and ½ the Parmesan cheese. Blend until smooth.
Pour mixture into a saucepan and gently heat. Add to cooked macaroni, stir and top with remaining cheese.
