1 Tbsp Aldonza Extra Virgin Olive Oil
1/2 cup(s) onions, diced
1/2 cup(s) carrots, diced
1/4 cup(s) celery, diced
2 cloves garlic
1 Tbsp chipotle in adobo, minced
1 russet potato, diced
32 fl oz vegetable stock
15 Oz canned pumpkin
1 cup(s) water
1/4 cup(s) roasted salted pepitas
1/4 cup(s) Follow Your Heart Dairy Free Parmesan

Instructions

Heat olive oil in a medium saucepan on medium-high.

Add onions, carrots, celery, and garlic. Cook several minutes until onions are translucent.

Then add minced chipotle, potatoes and vegetable stock. Bring to a simmer and cook until potatoes are tender. Remove from heat.

Spoon into a blender along with the pumpkin (you may have to do this in batches). Blend until smooth.

Serve with dairy free Parmesan and pepitas.
