Recipe makes 6 Servings

1 Tbsp olive oil
4 garlic, minced
1 small yellow onion, chopped
1 red bell pepper, chopped
1 green bell peppers, chopped
2 Tbsp flour
2 cup(s) low sodium vegetable stock
14 1/2 fl oz diced tomatoes
2 cup(s) mushrooms, quartered
2 cup(s) okra, frozen
1 Tbsp H-E-B Texas Originals Cajun Seasoning Spice Blend

Heat a large Dutch oven on medium-high with oil.
Add garlic, onion and bell peppers and cook until onions are translucent.
Stirring constantly, sprinkle in flour and continue to cook 4 to 5 minutes.
Add in vegetable stock and bring to a simmer.
Stir in remaining ingredients, bring back to a simmer, cover, reduce heat to a low simmer and cook until well thickened.
Chef's note: Serve over brown rice or with crusty bread.
