Vegan Taco Wraps

Recipe makes 4 Servings

1 Tbsp extra virgin olive oil
1 Lb Banyon Foods Extra Firm Tofu, drained and crumbled
1 Tsp cumin
1/2 Tsp turmeric
1/2 Tsp black pepper
1 Tsp dried oregano
1 Tsp dried chili powder
1 red bell pepper, julienned
1 cup(s) white onion, julienned
11 butter lettuce leaves
1 tomato, diced
1 avocado, diced
1/2 cup(s) cilantro, chopped
1 lime, cut into wedges

In a large bowl, combine tofu with all of the spices until well combined.
Place a large skillet over Medium heat. Add 1 Tablespoon oil. When hot, add tofu and cook until well browned, about 10 minutes. Set aside.
Place a second pan over Medium heat. Add remaining oil. When hot, add onions and peppers. Cook until slightly tender.
To build taco wraps, fill lettuce leaves with 1/3 cup tofu filling and top with bell peppers and onions, tomatoes, avocado and cilantro.
Garnish with lime wedge.
