3 cup(s) Silk Almond & Cashew Protein & Nut Milk
4 Tbsp cornstarch, plus 1 tsp
2 Tbsp H-E-B Organics Cocoa Powder
2 Tsp vanilla extract
1/4 cup(s) H-E-B Organics Pure Cane Sugar
1/2 Tsp kosher salt
3/4 cup(s) H-E-B Organics Bitter-Sweet Chocolate Mini Baking Chips, plus more as needed for garnishing pudding

Instructions

In a blender, combine protein and nut milk, cornstarch, cocoa powder and vanilla extract. Blend until smooth.

Pour blender contents into a small pot over medium heat. Add sugar and salt and bring to a simmer, whisking constantly to keep from scorching.

Once mixture starts to thicken up, add chocolate chips, reduce heat to low and continue whisking until nicely thickened and chocolate is melted.

Pour into a clean glass bowl and place plastic wrap on top of pudding to keep skin from forming.

Wrap bowl completely with plastic wrap and refrigerate at least 6 to 8 hours overnight for best results.

Once pudding is set, remove plastic wrap and fill small bowls with pudding. Garnish with more chocolate chips on top.

Serve with a little whipped cream or powdered sugar if desired.
