Vegan Chocolate Mousse

3/4 cup(s) cashew milk
1 cup(s) Enjoy Life semi-sweet chocolate chips
12 Oz organic silken tofu
2 Tbsp maple syrup
1 Tsp vanilla extract

Place cashew milk and chocolate chips in a microwave-safe bowl and heat about 1 minute (depending on microwave). Stir until chocolate chips are dissolved. If necessary, heat a bit longer. Let mixture cool for a few minutes.

Add chocolate mixture, tofu, maple syrup, and vanilla to a food processor or blender and process until puréed. If not chocolaty enough, add more chocolate chips. Do not add more milk because the mousse won't set properly.

Pour into 4 - 5 ramekins or small dishes. Chill 2 - 3 hours and it's ready to eat!
