Tuscan Shrimp with Fresh Spinach

Recipe makes 4 Servings

1 Lb large shrimp, peeled and devained
2 Tbsp Central Market Infused Lemon Extra Virgin Olive Oil, divided use
3 Tbsp garlic, minced, divided use
1 Tbsp Italian seasoning blend
16 Oz fusili pasta
2 Tbsp unsalted butter
1/8 Tsp salt
1/2 cup(s) Grana Padano Cheese, shredded
5 Oz fresh baby spinach

Marinate shrimp with 1 tablespoon lemon oil, 2 teaspoon garlic, and Italian seasoning; set aside 10-15 minutes.
Meanwhile, cook pasta according to package directions; drain well.
In the same pot melt butter, add remaining lemon oil and sauté garlic.
Add hot pasta, cheese, and salt; toss to mix. Cover to keep warm.
In a large skillet over medium-high heat cook shrimp 3-4 minutes or until shrimp turns pink and begins to curl, turning continuously.
Remove skillet from heat, and add spinach; toss with hot shrimp to wilt.
Toss shrimp and spinach with pasta.
