Turkey, Green Beans, and Potato Casserole

Recipe makes 6 Servings

16 Oz baking potato, diced
16 Oz green beans
2 Tbsp H-E-B Extra Light Tasting Olive Oil
1 cup(s) chopped sweet onion
2 garlic cloves, chopped
2 Tbsp basil, chopped
3 cup(s) smoked turkey, chopped
1 cup(s) original potato chips, crushed
1/2 cup(s) shredded parmesan cheese

Heat oven to 400°F.
Spray a 3-quart baking dish with nonstick cooking spray and set aside.
Prepare potatoes wrapped in a damp cloth in the microwave oven for 7-10 minutes and green beans according to package directions and set aside.
Heat a large, heavy-bottom skillet over medium heat for 2 minutes.
Add olive oil and onions and stir-fry for 3 minutes or until golden. Add garlic, cooked potatoes, green beans, basil, and turkey and stir-fry for 3 minutes.
Spoon mixture into prepared baking dish and top with crushed potato chips and shredded cheese.
Bake uncovered on center oven rack for 10 minutes or until cheese is melted.
