Recipe makes 12 Servings

2 boxes Hill Country Fair Cornbread Mix (plus eggs and milk listed on packets)
1 Lb lean 93% ground turkey
1 1/4 Oz H-E-B Low-Sodium Taco Seasoning Mix
15 Oz no salt black beans, drained
15 1/4 Oz corn kernels, drained
14 1/2 Oz diced tomatoes with green chiles, drained
8 Oz tomato sauce
1 1/2 cup(s) colby jack cheese, shredded and divided

Heat oven to 425°F.
Prepare cornbread mix according to package directions; set aside.
Brown turkey in a large, ovenproof skillet over medium-high heat.
Add seasoning mix, cook 3 more minutes.
Stir in beans, corn, tomatoes, (drained) tomato sauce and 1 cup cheese.
Boil and simmer 5 minutes; remove from heat.
Pour cornbread mixture over top; sprinkle with remaining 1/2 cup cheese.
Bake 15 to 20 minutes, or lightly browned and firm in the center when touched. Serve with a spoon.
