Recipe makes 10 Servings

1 cup(s) H-E-B Bone-In Turkey Breast, pulled off the bone and diced
2 cup(s) romaine lettuce, chopped
1 cup(s) cherry tomatoes
1/2 cup(s) red onion, diced
4 large eggs, hard-boiled and chopped
1 cup(s) Italian parsley, loosely packed
2 cup(s) Greek yogurt plain
1/4 cup(s) chives, chopped
1 Tbsp garlic, minced
1 lemon, juiced
1 Tsp kosher salt

In a large bowl, combine turkey, lettuce, tomatoes, onions and eggs and toss together.
To make dressing, place parsley, yogurt, chives, garlic, juice, and salt in blender and blend until smooth and green. If mixture is too thick add a tablespoon of water at a time.
Pour enough dressing to coat salad and toss.
Chef's Note: Dressing will keep up to a week in the fridge.
