Turkey and Poblano Tater Tot Bake

Recipe makes 8 Servings

2 Tbsp vegetable oil
1 cup(s) poblano pepper, stemmed, seeded and diced small
1 cup(s) white onion, diced small
2 Lb lean ground turkey
10 1/2 Oz H-E-B Cream of Poblano Condensed Soup
3 cup(s) H‑E‑B Select Ingredients Mexican Thick Cut Shreds, divided use
28 Oz frozen tater tots, as needed for topping casserole

Preheat oven to 350ºF.
In a small sauté pan add oil and allow to get hot. Add peppers and onions and sauté until just soft. Approximately 4 to 6 minutes.
Add turkey to a bowl along with sautéed peppers and onions, salt and pepper. Mix everything together.
Using a 9x13-inch casserole dish, spread out meat in a single layer evenly in bottom of dish. Spread soup evenly on top of meat followed by 2 cups of cheese layered.
Layer tater tots on top of cheese evenly, then add remaining cheese evenly over tots.
Bake 45 minutes to 1 hour or until internal temperature reaches 165ºF and tater tots are crispy. Allow to cool before cutting and serving, season to taste as needed.
