Turkey and Butternut Squash Chili

Ingredients

Recipe makes 6 Servings

1 Tbsp olive oil
1 Lb extra lean ground turkey
1/2 yellow onion, diced
1 Tbsp garlic, chopped
1 jalapeño pepper, chopped
2 package (10 oz.) H-E-B Diced Butternut Squash
2 Tbsp chili powder
1 can (28 oz.) whole tomatoes
1 can no salt added kidney beans, with liquid
1/2 Tsp kosher salt

Instructions

Heat oil in a large heavy bottom pan over medium high heat.

Add in ground turkey and cook until meat browns. Then add in onions and garlic.

Continue to cook until onions become translucent.

Add in jalapenos and butternut squash and continue to cook for an additional 3 to 4 minutes.

Next add in chili powder and tomatoes. Allow the pot to come to a simmer then reduce heat and cover.

Cook for 15 minutes stirring occasionally.

Stir in beans and salt then cook for an additional 5 minutes.

Serve immediately.
