Tuna Tacos with Chipotle Sour Cream

Recipe makes 4 Servings

1/2 cup(s) low fat sour cream
2 Tbsp Goya Chipotle Peppers in Adobo, blended
1 lemon, juiced
1/8 Tsp salt
1/8 Tsp pepper
2 Tbsp canola oil
4 individually frozen ahi tuna steaks
1 white onion, diced
3 roma tomato, chopped
8 whole wheat tortillas

In a small mixing bowl blend sour cream, chipotle, and lemon juice. Salt and pepper as needed. Cover and chill.
Place a large sauté pan over medium-high heat. Add oil.
Slice tuna steaks into 1/2 inch thick pieces. Salt, pepper, and sear in hot pan 30 seconds on each side. Remove tuna to a plate.
Serve tuna with onion, tomatoes, chipotle sour cream, and warm tortillas.
