Truffle Scalloped Potatoes

Recipe makes 10 Servings

4 Tbsp unsalted butter
3 1/2 Tbsp all purpose flour
3 1/2 cup(s) whole milk
8 Oz cream cheese
2 1/2 Lb red potatoes, sliced thick
2 1/2 Tbsp truffle salt
1 non-stick cooking spray
1 cup(s) shredded Gouda cheese

Place a large pot over medium heat and preheat oven to 375°F.
Melt butter in pot and add flour and stir 2 minutes. Mixture should be smooth.
Add milk and cream cheese. Stir until cheese is melted and bring to a simmer.
Once mixture is simmering, add sliced potatoes and truffle salt. Cook 15 minutes.
Coat a 9 x 13-inch pan with non-stick cooking spray and pour in potatoes.
Top with shredded cheese and bake covered 15 minutes and then uncovered 15 minutes.
