Truffle Parmesan Oven Fries

Recipe makes 6 Servings

6 medium russet potatoes
5 Tbsp Montana Mex Avocado Oil
3/4 Tbsp kosher salt
1/4 cup(s) parmesan cheese - grated
1 Tbsp Sabatino Tartufi Truffle & Salt

Preheat oven to 475°F.
Peel potatoes and cut into wedges.
Place cut potatoes in a bowl with warm water and set aside for 15 minutes.
Drain potatoes and dry thoroughly on paper towels.
Toss potatoes in 1 tablespoon of avocado oil.
Pour 4 tablespoons of avocado oil on a large sheet pan. Evenly sprinkle kosher salt over the oil.
Place dried potatoes in a single layer on the pan.
Cover pan tightly with foil and bake for 5 minutes on the bottom rack of oven.
Remove foil and bake for another 10 minutes.
Turn fries over, keeping them in a single layer, then bake for another 10 - 15 minutes, or until crispy on all sides.
Place fries in a bowl, toss with parmesan and truffle salt. Serve immediately.
