Recipe makes 4 Servings

3 cup(s) fully cooked fit chicken breasts
1 red bell pepper, diced
1/2 cup(s) red onion, minced
1 cucumber, minced
1 1/2 cup(s) pineapple, diced
3 Tbsp pure olive oil
1/4 cup(s) lime, juiced
1 cup(s) parsley
1 cup(s) chives, finely chopped
1/4 cup(s) thyme
2 Tbsp large navel orange, zested
1/2 Tsp iodized salt
1/4 Tsp ground black pepper

In large bowl, toss together chicken, red pepper, red onion, cucumber and pineapple.
In bowl of food processor, place olive oil, lime juice, parsley, chives, thyme, orange zest, salt and pepper to make dressing.
Process until pureed.
Pour dressing over salad ingredients and toss well.
Serve immediately, or cover and refrigerate until served.
