Ingredients

Recipe makes 8 Servings

1/4 cup(s) pine nuts
1/3 cup(s) roasted walnuts, slightly crushed
3 cup(s) fresh basil, leaves only slightly packed
3 cloves of garlic, smashed
1 Tbsp anchovy paste, or 3 oil packed anchovy fillets
1/3 cup(s) Parmesan cheese, grated
1 Tsp fresh lemon juice
1/4 cup(s) Pecorino Romano, grated
1/4 cup(s) extra virgin olive oil, plus more as needed to reach desired consistency

Instructions

In a dry non-stick pan, lightly toast pine nuts until just slightly browned and nutty in fragrance. Remove from heat and allow to cool slightly before proceeding.

Combine everything except Pecorino cheese and olive oil into a food processor and blend until smooth, scrapping down sides as needed to incorporate everything.

Remove mixture to a serving dish, fold in Pecorino and olive oil. Season to taste as needed and serve.
