Ingredients

Recipe makes 6 Servings

2 Tbsp vegetable oil
1 1/2 cup(s) long grain white rice
1/2 cup(s) white onion, finely diced
1 large clove of garlic, minced fine
1 large carrot, peeled and diced small
2 1/3 cup(s) chicken broth
1/3 cup(s) picante sauce

Instructions

In a medium sized non stick saucepan set over medium heat, add oil, rice, onions, garlic and carrots.

Stir fry until rice is opaque in color and onions are nicely sweated. Stir frequently to keep rice from toasting too much.

Add chicken broth, picante sauce. Bring to a simmer, cover pot and reduce heat to low.

Cook until all liquid is absorbed approximately 20 to 25 minutes. Fluff with fork, season to taste.
