12 Oz cooked cocktail shrimp, medium
1 cup(s) pineapple, chopped
1 cup(s) H-E-B Sugar Snap Peas
1/2 cup(s) jicama, chopped
1/2 cup(s) grapes, cut in half
1/2 cup(s) yellow bell pepper, chopped
2 green onions, sliced
1/3 cup(s) lime, juiced
1/4 cup(s) H-E-B Light Brown Sugar
1 Tbsp balsamic vinegar
2 Tsp ginger, shredded
1/4 Tsp ground Cayenne pepper
3 red leaf lettuce, washed and torn
1/4 cup(s) Hill Country Fare Chopped Pecans

Instructions

Rinse and drain shrimp.

Combine shrimp, pineapple, peas, jicama, grape halves, bell pepper and onions together in a large bowl.

Combine dressing ingredients, lime juice, brown sugar, balsamic, ginger and cayenne pepper in a small bowl.

Pour over shrimp mixture and toss to coat.

Spoon dressed shrimp mixture over lettuce-lined plates or platter and garnish with pecans.
