Tortellini with Sausage and White Beans

Recipe makes 8 Servings

1 Tsp olive oil
1/4 Lb mild Italian sausage, removed from casing
2 garlic, minced
1/2 yellow onion, diced
18 Oz Buitoni Whole Wheat Three Cheese Tortellini
28 fl oz crushed tomatoes
15 Oz Bush's Best Great Northern Beans, drained and rinsed
2 cup(s) spinach, chopped
1 cup(s) basil, torn
2 Tbsp Parmesan cheese, grated

Heat a large Dutch oven or heavy bottom skillet to medium. Add oil and sausage. Break sausage apart as it cooks with back of spoon. Cook several minutes then add in garlic and onion. Continue to cook until onion is translucent.
Add in tortellini and remaining ingredients, bring mixture to simmer then reduce heat and cover. Allow tortellini to cook until they are cooked through, but still firm. Approximately 15 minutes.
Serve in large bowls with Parmesan cheese on top.
