Tomato Hummus Toasts with Mixed Greens

4 H-E-B Bake Shop 100% Whole Wheat Thin Rounds Bread
8 Tbsp roasted red pepper hummus
2 medium tomatoes, sliced
2 garlic cloves, minced
1 lemon, juiced
5 Oz Central Market Organics Power Greens
1 cucumber, sliced
1/2 cup(s) red onion, thin slices
1/2 cup(s) basil leaves, chopped
2 Oz Crumbled Feta
2 Tbsp olive oil
1/2 Tsp kosher salt
1/2 Tsp black pepper

Toast each thin round.
Spread 1 tablespoon of hummus on each toasted round.
Top with sliced tomato.
Divide among 4 dinner plates. Set aside.
Make vinaigrette: In a small resealable container (like a small jar) combine garlic, lemon juice, and olive oil. Shake vigorously and set aside.
Place mixed greens, cucumber, sliced onion, basil, and a bit of feta on top of toast and tomato slices.
Drizzle lightly with vinaigrette, and season with salt and pepper.
