Tomato Grilled Cheese Sandwiches with Red Pepper Tomato Soup

28 Oz Italian San Marzano Tomatoes
12 Oz H-E-B Yellow and Red Peppers, drained and chopped
2 cup(s) vegetable broth
1/2 cup(s) non fat plain Greek yogurt
2 Tsp unsalted butter
4 slices H-E-B Essential Grains 12 Grain Bread
2 slices 2% sharp cheddar cheese
1 medium roma tomato, sliced

Combine tomatoes, peppers and vegetable broth in large saucepan and bring to a low simmer.
Remove from heat and pour mixture in blender or food processor and purée until smooth. Do this in batches if necessary.
Return tomato mixture to saucepan and slowly add yogurt. Reduce heat to low and cook until warm. Do not simmer or boil, as yogurt will curdle.
To make sandwiches, heat a large skillet over medium. Spread butter on 1 side of each slice of bread.
Place 1 slice of cheese and tomato on 2 slices of bread. Top with remaining bread, butter side up.
Grill each sandwich 2-3 minutes per side or until cheese melts.
Remove from skillet and cut in half.
Serve half of sandwich with 1 1⁄2 cups of soup.
