Tomato, Cucumber and Feta Salad with Piri Piri Vinaigrette

Recipe makes 15 Servings

1/4 cup(s) Food Truck Fusion Katy's Peri Peri Sauce
1 medium shallot, finely minced
1 Tsp honey
1 Tbsp red wine vinegar
1/3 cup(s) grapeseed oil
2 cup(s) cherry tomatoes, washed and sliced in half
2 English cucumbers, diced into bite size pieces
1 block of feta cheese, cut into small squares or chunks
1 head of butter lettuce, sliced thinly

In a medium bowl, combine Peri Peri sauce, shallot, honey, vinegar and whisk together.
Slowly add oil while whisking to form an emulsion. Refrigerate until ready to use.
Mix tomatoes, cucumbers, feta and lettuce in a large serving bowl.
Dress with as much of vinaigrette as needed and serve.
