Tomatillo Spiced Mussels with Avocado Salsa

Ingredients

Recipe makes 6 Servings

2 Tbsp extra virgin olive oil
4 fresh garlic cloves, thinly sliced or minced
1 medium shallot, minced
2 Lb fresh live mussels, rinsed, beards removed if necessary, broken or open shells discarded
1/2 cup(s) dry white wine
1/2 cup(s) Four J Tomatillo & Avocado Fish Taco Salsa
3 Tbsp salted butter
1/3 cup(s) fresh cilantro, chopped

Instructions

In a large pot with tight fitting lid, add olive oil, garlic and shallots. Cook over medium heat until translucent.

Add mussels, and stir fry for 1 to 2 minutes, then add wine and salsa.

Place lid back on pot, and turn up heat to medium high.

Cook until liquid has reduced slightly and mussels are open. Discard any mussels that don't open.

Turn off heat, adding butter and cilantro.

Place lid back on for butter to melt, about 2 to 3 minutes.

Stir mussels, season with salt and pepper to taste.
