Recipe makes 4 Servings

4 Tbsp extra virgin olive oil
3 Tbsp walnut halves
2 Tbsp red wine vinegar
1/8 Tsp iodized salt
1/8 Tsp black pepper
5 Oz Central Market Organics spring mix
1 can (12.3 oz) pear halves in juice, drained and thin sliced
1/2 cup(s) shredded Parmesan cheese

Heat a small skillet over medium heat for 2 minutes and add olive oil and walnuts.
Stir-fry for 1 minute until walnuts are lightly browned.
Remove toasted walnuts from the oil with a slotted spoon and cool.
Place skillet with olive oil back on stove top and add the vinegar.
Stir to combine.Season dressing with salt and pepper.
Place dressing in a large salad bowl and top with spring mix, pear slices, shredded Parmesan cheese and toasted walnuts; toss and serve.
