Toasted Peppercorn Filet of Beef

Recipe makes 8 Servings

1/4 cup(s) H‑E‑B Peppercorn Medley With Grinder, dry toasted in a pan until just fragrant
2 Tbsp Wondra Flour
2 Tbsp kosher salt
2 Tbsp extra virgin olive oil
3 Lb whole trimmed beef tenderloin

Crush peppercorns coarsely, mix them with flour and salt until combined.
Rub olive oil over entire surface of meat then coat meat with pepper mixture.
Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
Preheat grill to medium high heat, and allow meat to sit at room temperature for at least 30 minutes before grilling. Preheat oven to 350°F.
Place meat on grill and cook 3 to 5 minutes per side or until meat is nicely marked on all sides.
Place meat on a sheet pan lined with foil and roast in oven for 10 to 15 minutes. Cook until meat reaches desired doneness; 140°F is recommended.
Allow to rest before serving. Season to taste as needed.
