Tilapia A La Veracruzana

1 Tbsp extra virgin olive oil
4 Tilapia filets
4 garlic cloves, minced
29 Oz diced tomatoes with green chilies
1 Tsp dried oregano
1/4 cup(s) capers, drained

Heat oven to 375°F .
Heat olive oil in a large skillet. Cook tilapia filets 2 minutes on each side, transfer to 9 x 13 in baking dish and arrange tightly. Set baking dish aside.
Return skillet to burner and sauté garlic 2 minutes or until slightly brown. Add diced tomatoes and oregano, and bring to a boil. Reduce heat, add capers, and simmer 5 minutes.
Pour hot tomato mixture evenly over tilapia filets in baking dish. Bake until tilapia is cooked and heated through, about 5 minutes.
