Recipe makes 6 Servings

1 Lb Wright Brand Applewood Sliced Bacon
2 cup(s) flour
1/3 cup(s) brown sugar
1 Tbsp baking powder
1 Tsp baking soda
1 Tsp salt
5 eggs
2 1/2 cup(s) buttermilk
1/3 cup(s) vegetable oil
1/2 Tsp vanilla extract

Preheat a waffle iron; grease with bacon fat.
Whisk the flour, brown sugar, baking powder, baking soda, and salt together in a large bowl.
In a separate bowl, beat eggs, buttermilk, oil and vanilla together.
Fold the wet mixture into the flour mixture.
Add cooked bacon and stir; be careful not to over mix.
Ladle 1/3 cup of the batter into the preheated waffle iron and cook until desired texture.
Chef's Note: feel free to add chives for a garnish!
