The Grilled Broccolini Melt

Ingredients

Recipe makes 6 Servings

2 Lb Broccolini, rinsed and drained
2 Tbsp extra virgin olive oil
1 Tsp kosher salt, plus more as needed to taste
1 Tsp cracked black pepper, plus more as needed to taste
2 Tsp lemon juice
1 Tsp fresh garlic, minced
6 bakery fresh onion rolls, plus more as needed
6 slices provolone cheese, plus more as needed

Instructions

Preheat grill to medium-high. Preheat oven to 400ºF.

In a large bowl, combine Broccolini, olive oil, salt, pepper, lemon juice and garlic. Toss to combine and allow to sit while grill preheats.

Place Broccolini on hot grill and cook 3 to 5 minutes per side or until nicely charred. Remove from grill to rest.

Toast rolls if desired. To assemble sandwiches, place Broccolini on bottom half of rolls, top with provolone cheese and bake 8 to 10 minutes or until cheese is melted.

Finish with your favorite burger condiments and top half of rolls.
