Texas Thai Pork Chops with Cucumber Salsa

Recipe makes 4 Servings

4 medium bone in center rib thick cut pork chops
1 Tbsp grapeseed oil
1 Tbsp Central Market Hot Thai Curry Seasoning
1 medium hothouse cucumber, peeled, seeded and diced
1 small red bell pepper, seeded, stemmed and diced
1 small serrano pepper, stemmed, seeded and very finely diced
1/4 cup(s) green onions, finely diced
1/4 cup(s) fresh cilantro, finely chopped
1 medium lime, juiced
1 Tbsp honey
1/3 cup(s) Food Truck Fusion Friday Night Lights Sauce

Heat grill to medium high. Rub pork chops generously with oil and 2 teaspoons of the seasoning on both sides. Allow to sit at room temperature for 20 minutes.
Add cucumber, bell pepper, serrano, green onions and cilantro to a small bowl. Sprinkle with remaining 1 teaspoon Thai seasoning, lime and honey. Stir and allow flavors to come together.
Place pork chops on grill. Cook on both sides until nicely browned and cooked to an internal temperature of 145 degrees.
Remove from heat. Drizzle with sauce and allow to rest for 5 minutes before serving. Serve with Cucumber salsa.
