Ingredients

Recipe makes 8 Servings

4 cup(s) green cabbage, thin sliced
3 medium carrots, grated
1/4 cup(s) green onions, chopped
1 1/2 cup(s) mild pico de gallo
1/4 cup(s) olive oil
1/2 cup(s) fresh lime, juiced
1 Tsp salt
1 Tsp pepper
2 cup(s) corn chips, regular

Instructions

In large bowl, combine cabbage, carrots, green onions and pico de gallo.

Combine olive oil and lime juice in small bowl; stir well.

Pour dressing over cabbage mixture and toss to coat. Season with salt and pepper.

Cover salad with plastic wrap and chill for 15 minutes or more.

Top salad with corn chips and toss before serving.
