31 Oz Hill Country Fare Black Eyed Peas
1 cup(s) Ragin Cajun Black Eye Pea
1/3 cup(s) yellow bell pepper, chopped
1/3 cup(s) red bell pepper, chopped
1/3 cup(s) green bell peppers, chopped
1 large red onion, chopped
2 jalapeno pepper, finely chopped
2 large roma tomato, chopped
1 garlic, very finely chopped
2 Tbsp H-E-B Red Wine Vinegar
2 Tbsp H-E-B 100% Pure Olive Oil

Drain and rinse the canned black-eyed peas or prepare dried peas according to package directions.
Combine peas, bell peppers, onion, jalapenos, tomatoes and garlic.
Toss until mixed.
Refrigerate up to 24 hours before serving if time permits.
Pour red wine vinegar and olive oil over salad 2 hours before serving. Toss to coat evenly.
