Recipe makes 8 Servings

1 cup(s) onion, diced, divided use
3 cloves of garlic
1 cup(s) pineapple, chopped
1 guajillo chili pepper, rehydrated
2 Tbsp chipotle in adobo, chopped
1/4 cup(s) orange juice
1 Tbsp olive oil
16 Oz tempeh, crumbled
8 corn tortillas
1/2 cup(s) onion, finely diced
1/4 cup(s) cilantro, minced
2 Tbsp lime juice

Combine onion, garlic, pineapple, chili, chipotle, and orange juice in a blender until smooth.
Heat oil in a large skillet on medium-high. Crumble in tempeh and cook 4 to 5 minutes until brown.
Add half the pastor sauce and cook an additional 4 to 5 minutes.
Remove from heat and serve in corn tortillas with pastor sauce, onion, cilantro and lime juice.
Chef's Note: The remaining pastor marinade can be stored in the freezer for 6 to 8 weeks.
