Ingredients

Recipe makes 4 Servings

14 Oz extra firm tofu, cut into eight 1/2 pieces
1/3 cup(s) salsa verde
1 garlic clove, minced
10 Oz low sodium refried black beans
4 soft sandwich rolls
1 cup(s) iceberg lettuce, shredded
1/4 cup(s) pickled jalapenos
1 cup(s) queso fresco, crumbled

Instructions

Slice tofu and place between 2 sheets of paper towels. Gently press tofu until paper towels are soaked through. Discard paper towels.

Place half of salsa verde in the bottom of a baking dish. Lay tofu in a single layer on top of salsa. Cover with garlic and remaining salsa verde.

Marinate 1 to 24 hours in the refrigerator.

Spray grill with non-stick spray. Preheat grill to Medium.

Drain salsa verde from tofu and pat dry with paper towels. Grill 2 to 3 minutes per side or until nicely browned.

While tofu is grilling, heat black beans in a microwave safe bowl 2 to 3 minutes or until heated through.

Assemble each sandwich by layering tofu, beans, lettuce, jalapeños and queso fresco.
