Tangy Fuji Apple Sauce with Vanilla Bean

Recipe makes 6 Servings

4 large fuji apples, peeled and diced into cubes
1/2 cup(s) H-E-B Organics Apple Cider Vinegar Unpasteurized
4 cup(s) Central Market Organic Apple Juice
1 Tsp vanilla extract, or 1 vanilla bean split and scraped

Place apples into a large bowl along with, apple cider vinegar and apple juice. Let it sit in water for 30 to 45 minutes. Make sure apples stay completely covered with water.
Place a large sauté pan over medium-heat, add apples and 1 cup of soaking liquid.
Reserve remaining soaking liquid and add 1 cup each time as liquid evaporates during cooking.
Repeat this process until all liquid has been used and apples are soft and starting to caramelize. Add vanilla bean, turn off heat and stir to combine.
Allow to cool completely before placing into a container with lid. Then refrigerate for at least 1 hour, or overnight is best to allow flavors to develop and sauce to thicken.
Serve over oatmeal, on pancakes or by itself for a great after school snack.
