Recipe makes 2 Servings

12 Oz cod fillets
1/2 Tsp H-E-B Texas Originals Beef Fajita Spice Blend
1/2 cup(s) red onion, chopped
1 cup(s) celery, chopped
2 cup(s) tomato, chopped
1 jalapeño pepper, thin sliced
1 lime, juiced
4 Tbsp cilantro, chopped
1 Tbsp extra virgin olive oil
2 cup(s) Central Market Organic Spring Mix

Remove cod fillets from the package and cut into 1/2 inch pieces and place in a microwave safe dish.
Season the cod with a 1/2 teaspoon of the fajita seasoning. Reserve the remaining fajita seasoning for the Ceviche.
Cover the dish with plastic wrap and microwave on High power for 3 minutes or until flaky; drain & cool for 15 minutes.
Combine the drained cod fish, chopped onion, chopped celery, chopped tomato, sliced jalapeño pepper, 1 lime juiced, cilantro, remaining fajita seasoning, and olive oil in a large bowl and toss to combine.
For each salad, serve 1 1/2 cups Ceviche over 1 cup of Spring Mix greens.
