Instructions

1
Bring a large pot of water to a boil, add pasta and cook according to package instructions, drain and set aside.
2
Set another pot or same pot once cleaned out over medium high heat, add oil, onions, garlic and cumin. Stir-fry for 3 to 5 minutes or until onions are just soft.
3
Add milk, and cream and gently whisk to keep it from burning. Turn heat down to medium and allow sauce to simmer until it starts to just reduce slightly.
4
While sauce is simmering, combine cheese and cornstarch into a bowl and toss to combine.
5
Add cheese and cornstarch mixture to pot and whisk until sauce starts to thicken, add tamales, pasta and remaining cheese.
6
Stir to combine, turn off heat and allow cheese to melt before serving, season to taste as needed.
7
Chef's note: My favorite way to serve this is to place mac and cheese into a prepared baking dish and cover with more cheese and crispy fried onions, bake at 350F for 5 to 7 minutes.
