Scoop vanilla ice cream into individual ramekins and smooth tops so they are flat. Place ramekins in the freezer for 20-30 minutes to harden.
Remove ramekins from freezer. Spoon 1 tsp of sugar over the top of each ramekin. Using a kitchen torch, caramelize the tops quickly to melt the sugar. Do this whole step quickly so ice cream stays as hard as possible.
Once sugar melts and hardens place ramekins back in freezer for 2 minutes to allow sugar to set. Serve with fresh berries or a sprig of fresh mint to garnish.
