Recipe makes 2 Servings

1 Lb ground beef
1 1/4 Oz H-E-B Taco Seasoning Packet
2/3 Oz water
6 slices sourdough bread, similar sizes
4 Tsp H-E-B Roasted Garlic and Herb Finishing Butter
2 slices American cheese
2 Tbsp shredded cheddar cheese
4 Tsp H-E-B Medium Pico de Gallo

In a medium pan over medium-high heat, brown ground beef and crumble with spoon. Drain grease.
Add taco seasoning packet and water and cook 15 minutes until thickened. Set aside.
Butter 4 slices of bread and place 1 to 2 slices in non-stick skillet over medium-low heat. Do not overcrowd pan.
Place remaining two non-buttered slices on cutting board and using a knife, core slice of bread and remove crust (but keep crust in one piece). The more bread you remove the more space you'll have to stuff your grilled cheese.
Place 'cored' crust on bread in pan. Layer 1 slice of American cheese, a couple spoonfuls of seasoned beef (about 2 ounces) and a spoonful of shredded cheddar cheese on beef. Top pico de gallo and other bread slice.
Press down slightly with spatula and cook until golden brown, then tilt pan and carefully flip grilled cheese. Cook an additional 3 minutes or until golden brown.
Allow to sit a minute before slicing. Serve with tortilla chips, salsa or queso.
Chef's Note: Fill grilled cheese with your favorite taco toppings like jalapeños, cilantro and chopped onion. Reserve left over seasoned beef for additional tacos for a quick meal.
