Sweet Potato Sesame Noodles

Recipe makes 4 Servings

10 .7000 Oz sweet potato spirals
2 Tbsp tahini paste
1 Tbsp toasted sesame oil
2 Tbsp rice wine vinegar
1 Tbsp honey
1/4 Tsp crushed red pepper flakes
1/4 cup(s) green onion, chopped
1 red bell pepper, julienned
1 Tbsp black sesame seeds

Bring a large pot of water to a boil. Add noodles to water for 1 minute or just until soft. Skip if you want crunchy noodles.
In a small bowl whisk together tahini, sesame oil, vinegar, honey, red pepper flakes, salt and pepper.
Toss noodles, green onion, and bell pepper together with the dressing to coat.
Top with sesame seeds.
For protein add steamed shrimp or a cup of shredded chicken.
