Sweet Potato and Sea Buckthorn Bisque

Recipe makes 8 Servings

1 cup(s) shallot, chopped fine
4 cup(s) sweet potato, peeled and diced
1 cup(s) celery, diced
2 Tsp garlic, minced
4 cup(s) chicken stock
1/2 Tsp ground thyme
1 cup(s) plain Greek yogurt
1 H-E-B Souper Fruit Sea Buckthorn Berry Apricot & Apple

Place a large soup pot over medium heat.
Add shallot, sweet potato, celery, garlic, stock and thyme to pot. Simmer.
Cook 20 minutes until sweet potato is completely soft.
Carefully pour mixture into a blender.
Pulse at first to break down chunks and then blend at high speed 1 minute until completely smooth.
Add yogurt and pulse again to incorporate.
Return mixture to pot over medium heat and add H-E-B Souper Fruit. Turn off burner once heated through.
